healthy granola

Healthy Granola Bars Granola bars a huge hit in The Spring Mount 6 Pack house. All my kids love them, even Anthony who is such a picky eater. This is a great way to make granola bars without all the sugar and additives. They are a snack you can feel good about giving your kids.  
1 cup brown sugar 1/2 cup butter 2 Tbsp. honey 1/2 cup. natural peanut butter (or natural almond butter - it's great both ways) 1/2 teaspoon pure vanilla extract 1 egg 1 1/3 cup flour 1/2 teaspoon baking soda 1 teaspoon salt 1 3/4 cup rice crispies 1 3/4 cup rolled oats 1/2 cup coarsely chopped almonds 1 cup chocolate chips 1 cup coconut Mix 1st 6 ingredients together. Mix dry ingredients together, except the chocolate, coconut. Add to wet mixture, fold in the remaining ingredients, then turn into an 11x15 greased pan and bake @ 350 for 20 minutes or so. It is best to cut them while warm. Adding pumpkin seeds or sunflower seeds instead of almonds adds a nice variety. Adding raisins or dried cranberries will give you an oatmeal raisin type of granola bar, but you should add about a teaspoon or so of cinnamon! Enjoy.
